Grind-by-Weight vs. Single Dosing: Which One Actually Fixes Your Dose?

Grind-by-weight grinders are the fastest-growing category in home espresso, but the lab data shows they solve a problem single-dosers already solved for free. Here is who should pay the premium and who should not.
Short answer: a grind-by-weight grinder earns its premium if you grind from a hopper, and earns you almost nothing if you already single dose. A built-in scale solves dose drift — the slow wander caused by bean density, hopper fill level and grind-size changes. It does not solve dose accuracy, because a €20 kitchen scale and a bean cup already give you that. Working out which of those two problems you actually have is the entire decision, and it is worth roughly €300 in either direction.
What a grind-by-weight grinder actually does
A gravimetric grinder puts a load cell under the portafilter fork. It tares, starts the burrs, watches mass climb in real time, and cuts the motor when it predicts the target is hit. Because it measures output instead of counting seconds, it self-corrects: dial finer, and it simply runs longer to land on the same 18 g.
It works well. In Kaffeemacher's comparison of gravimetric grinders, most models held target to within ±0.1 g, and the Mahlkönig E64 WS and Fiorenzato Allground Sense Plus posted a standard deviation of just 0.067 g across repeated doses.
That prediction step is the hard engineering. Burrs do not stop instantly — they spin down for a fraction of a second while grounds keep falling. Every competent GbW grinder therefore cuts the motor slightly before the target and lets the tail land on top.
The case for it: timed dosing drifts more than you think
A timer grinder is an open loop; it has no idea what came out. Clive Coffee's breakdown of gravimetric dosing puts the range plainly: the same 10-second setting can yield 17 g of one coffee and 19 g of another, because bean density, roast level and humidity change how much mass passes the burrs per second. Hopper fill adds its own error, since a near-empty hopper applies less bean pressure to the burr throat.
Scale that against the basket. On an 18 g dose, a 1 g error is a 5.6% shift. Hold output constant at 36 g and your brew ratio slides from 1:2.00 to 1:2.12 without you touching anything — enough to send you chasing the grind adjustment for a problem the grinder created. The case against: retention is the tax nobody quotes
The load cell sits under the fork, not inside the burr chamber. It cannot weigh coffee that never leaves the grinder. And retention across current gravimetric models varies by nearly a factor of five, according to the same Kaffeemacher measurements:

Temporary retention is the figure that matters, because it recirculates. At 6.6 g on an 18 g dose, over a third of this morning's basket was ground yesterday and has been oxidising in the chute overnight. The scale still reports a flawless 18.0 g. It is precisely the right mass of partly stale coffee.
This is the trade the spec sheet hides: gravimetric grinders need a chute and a fork, and chutes hold coffee. Single dosers throw out the chute geometry to get retention near zero — and then have nothing to weigh with.
The €299 question, in our data
Eureka sells the same grinder both ways. The Eureka Mignon Specialita is €380 with a timer. The Eureka Mignon Libra is €679 with a load cell under the fork. Same flat burrs, same chassis. You are paying €299 for the scale and nothing else, which is an unusually clean way to price a feature.
Now the alternative. The Niche Duo is €760 with no scale at all — a flat-burr single doser, where you weigh 18.0 g of beans into the cup and 18.0 g comes out, because there is nowhere for it to hide. The conical Niche Zero does the same at €650. Neither can drift, because neither is guessing.
So the gravimetric premium buys convenience, not accuracy. It buys not weighing beans. If you pull four shots a morning from a hopper, €299 is defensible. If you already keep a scale on the counter, it buys a higher-retention version of what you have.
Where the category is heading
Gravimetric is where the manufacturers are spending. ECM's Exacto, announced at $1,200 for the first quarter of 2026, signals that a machine-first brand now sees the grinder as the differentiator. At the other end, Fellow's Opus 2 moves to larger 48 mm conical burrs with explicit low-retention optimisation — and no scale. Both bets are on the table at once.
Our reading: within two years a load cell will be a €50 bill-of-materials line, and the real question will be retention, not weighing. Buy the burrs and the chute you will still want then.

No. Weighing beans into a single-dose grinder with near-zero retention is exactly as accurate and costs whatever your scale cost. Gravimetric grinders exist to remove the weighing step from a hopper workflow, not to beat a scale. Does high retention actually make coffee taste worse?
It makes it taste older and less repeatable. With 6.6 g of temporary retention, roughly a third of an 18 g dose carried over from the previous grind, so a bean switch takes several doses to fully flush. The standard workaround is a programmed purge dose of about 6 g into the bin each morning, which costs you coffee but clears the chute.
Can I add a scale to a grinder I already own?
Partly. A 0.1 g scale under the portafilter gives the same information, but you stop the grinder by hand, so you lose the sub-half-second cutoff and gain overshoot. Fine for a timed grinder; not a retrofit of the closed loop.
Does flat or conical change the grind-by-weight decision?
No. The load cell does not care what is above it. Choose burr geometry on the cup profile you want and treat weighing as a separate line item — which is exactly why the €380 Specialita and the €679 Libra share a burr set.
